If you are going to test a new application of iOS devices, which is considered as the best model to test it on regarding that you want to test on a representative device which represents most of iOS family devices?
The iPhone 7 seems like the safest bet here. It's a popular model that's still widely used, so it should give you a good idea of how your app will perform on most iOS devices.
