PPTP and L2TP aren't really designed for detecting packet injection, so I don't think those would be the best options for this IoT system.

IPSec with AH would also work for detecting packet injection, but ESP provides more comprehensive protection by encrypting the data as well.

IPSec with AH could also work, but I think ESP is the better choice as it provides both encryption and integrity protection. Can't go wrong with a classic like IPSec!

I'm not sure PPTP or L2TP would be the best choice here. Those protocols are more focused on creating secure tunnels, not necessarily detecting packet injection.
