This is a good one. I think Option C is the way to go - using the `Magento\Customer\Setup\Patch\Data\AddCustomerAttribute` to add the custom attribute, and then `Magento\Customer\Ui\Component\DataProvider\AddCustomerAttributes` to add it to the form. Solid strategy.
