Okay, I've got this. The answer is to define the field in the admin UI component XML file, and then in the data patch, set the attribute to be visible and not a system attribute. Easy peasy!

I'm not sure, but I think option D) Define the field in MyCompany MyModule/view/adminhtml/layout/catalog_category_edit.xml could also be a valid solution
