Option C seems like it would work, but it requires manually configuring the VLAN on each port. I think Option B is the way to go - it uses LLDP-MED to automatically detect the phones and put them in the right VLAN.

Option B seems like the best choice here. Using a source RPM will allow me to build the package from the source code, which is generally more reliable than just installing pre-built binaries. Plus, it gives me more control over the installation process.
