I think sensitivity is calculated as true positives divided by the sum of true positives and false negatives, but I'm not completely sure about the numbers to use from the matrix.

Okay, I think I've got it. The camera is sensitive to IR light in low-light mode, and the most common near-IR wavelength used in imaging is around 850 nm. That's my best guess.
