As a former baker, I can tell you that a 'GMP-compliant flag' sounds like a great way to get your production batch rejected by the health inspector. Just sayin'.
I'm leaning towards the GMP-compliant flag. It sounds like it would be a direct way for S/4HANA to support GMP requirements. But I wonder if it's as comprehensive as a batch record.
Approved resources and recipe approval are important for GMP, but I'm not sure if they're specific to S/4HANA. The digital signature could be a good feature too.
