I'm going to have to go with Option D. Keeping the data within the customer's own tenant is the safest bet. SAP doesn't need to see any of that sensitive information, am I right?

I agree with Rodrigo. Anonymization is the best solution here. Why not just give the IT department the ability to configure the tracking in the first place? Seems like a no-brainer.
