Okay, I've got a strategy here. For counting the students, object detection would be the way to go - I can use that to identify and count the individual people in the video frames. Then for detecting the yoga poses, pose estimation is definitely the right choice to analyze the position and angle of the limbs. I think those two models together should meet the requirements.
