I think the Display progress information option is the way to go here. That should let me see the activity results and labels as the workflow runs.

This seems like a straightforward security question. I think option C is the way to go - creating a single Master dataset with separate views for each department. That way, we can easily manage permissions and access without having to maintain multiple datasets.
